“Death by Chocolate” stout beer pie
October 1, 2023Huevos Rancheros is a typical Mexican breakfast dish that many people don’t know about. But once you know it and have made it once, you’ll definitely want to make it more often. It’s not something that can be made quickly, despite what all those Instagram influencers might tell you. It requires some preparation, but what could be better than making this on a Saturday morning and then enjoying a perfect breakfast? It’s not difficult, as the number of ingredients is manageable, and apart from chopping the onions, grilled peppers, scallions, etc., it’s mostly a matter of heating.
Origin of This Dish
Originally, this was truly a farmer’s breakfast from Mexico. You can compare it to a full English breakfast. After eating that, you’ll feel as full as you do after eating this dish. The ingredients from the original version (or common version) have mostly remained the same over the years. There hasn’t really been much variation, and that’s not a bad thing because it just means that a recipe is perfect. However, I have made my own version, and believe me, it’s incredibly delicious! Oh, and in case you’re wondering, this is also vegetarian.
Ingredients
8 small wraps
2 – 4 eggs
1 can of tomato pulp
1 can of kidney beans
1 grilled pepper (from a jar), finely chopped
1 red onion, finely chopped
2 scallions, thinly sliced
Grated cheese
Crème fraîche
2 tablespoons of paprika powder
1 teaspoon of chili flakes
1 teaspoon of onion powder
Pinch of salt and pepper
1 avocado, thinly sliced
Directions
- Finely chop the red onion. Slice the green part of the scallions into thin rings and cut the grilled pepper from the jar into small cubes.
- Heat a bit of olive oil in a small pan and add the kidney beans. Sauté the beans briefly and then mash them slightly. Scoop the beans into a bowl and set aside.
- Heat some olive oil in a large pan and sauté the chopped onions. Add the kidney beans and stir well.
- Add all the spices and stir to combine.
- Add the tomato pulp and grilled pepper cubes and mix everything together.
- Heat a bit of oil in a frying pan and cook the eggs sunny side up, then place them on a plate.
- Warm the wraps in a pan (or if you have pre-made wraps, heat them in the microwave).
- Place a wrap on a plate, spread some of the tomato mixture on it, then place a fried egg on top. Add a bit of grated cheese and a good spoonful of crème fraîche. Sprinkle some scallion rings over it.
